Oh yay!! Glad it worked for you! Here it is holding sweet potato pie for later today. (I couldn’t bear to trim excess so I folded the edges and kind of love how it turned out)

Mine’s 102, and I blame everyone who owned it after the original family! We’re nine years in, and almost everything we’ve done so far has been addressing deferred maintenance!! House *looks* great, but all the systems and infrastructure were a mess!!

I will never understand why anyone bothers with pumpkin pie when sweet potato pie exists! (My sweet potatoes are currently cooling so I can make my pie tomorrow)

Go for it! I recently found advice to start rolling from the middle of the crust, roll up once, then all the way down, then flip and rotate a quarter turn. Repeat, flouring the surface each time until you’ve got the right size. My crusts have come out much closer to round ever since!

I’ve recently started doing a 3:2 ratio of King Arthur to White Lily AP, and it rules. KA gives good structure, and the WL keeps it super flaky.

Use just enough water to bring the dough together. It’s ok if it’s a little wet, you’ll add more flour during rolling. Pat into a disc and wrap tightly. Let rest at least 20 minutes. Turn out to well floured surface. Sprinkle flour on dough and rolling pin. Flour dough each time you flip it.

Oh sure! For one crust:
1 1/4 c AP flour
3/4 tsp kosher salt
1 stick cold unsalted butter cut into chunks
~ 3oz very cold water
Mix dry ingredients, then cut in butter until it resembles coarse meal. Make a well and add the water a little at a time, mixing in gently with a fork. (1/2)
