Blend 900gms Chestnut mushrooms into #vegan 'mince'. Fry 2 onions, 4 X garlic, chopped rosemary + 2bsp olive oil for 10 mins to soften. Add mushrooms 15 mins, then 300mls red wine & simmer 15 till reduced by 2/3. Add 3 tins X organic tomatoes, s&p, 1 tbsp marmite, simmer 45-1hr. Serve with pasta. 😋

Super impressed with #MASA on Drury Street (D2) yesterday, great tasty small plates at equally great prices. I had the vegan soya tacos and Susan had pulled pork. The nachos with salsas & guacamole were great to start, and a Mexican beer for the washdown. 8/10.

Made this Butternut & Sage #Risotto as I had it recently at Circle of Missé Writers Retreat, France. Owner/chef Aaron Tighe is putting together a #cookbook of grub he feeds to writers! He makes his veg stock fresh, so I did too. It's very rich as it uses butter & cheese; once in an orange moon dish.

Love a #VeggiePie in winter. Roast 500gms mushrooms, 1 onion, 3 garlic, 2tsp ras el hanout, 1tsp salt, 2tbsp olive oil: 1 hour at 160⁰. Roast 3 sweet spuds, 1 celeriac, 2tbsp oil 45 mins. Add tin puy lentils, ½ lemon juice & coriander to mushrooms, mash spuds adding 100gms cheddar; grill for 6 mins.

Received my contributor copy of The Stinging Fly yesterday and am dipping in & out as the pages fall open. Nandini Rawat's story *Tulipa* - about the human cost of the logistics industry under capitalism - is absolutely brilliant. Spiky, zany-paced and genuinely terrifying, what a fantastic writer.

Haworth, Yorkshire, is a gorgeous #witchy town...straight out of the The Brontë parsonage, you hit a high street on a steep hill with lots of beautiful buildings.

Jealous vibes re: my niece's kitchen. Entire house is gorgeous and homely. Landing in a rainstorm, however, spliced a few years off my life. Channel Tunnel from Ireland to UK needs to be sunk into the sea by some billionaire tosspot, thanks, kindly, or return of cheap ferries might work too. ⛴️ ⛴️ ⛴️

On red eye tomorrow to #Leeds. My super-organised #niece is doing airport pickups, plus taking us to Tetley building, water taxis, Kirkgate Market, Corn Exchange, Delhi Wala Street Food, Leeds Art Gallery, Pieminister and a trip to Haworth to the Brontë Museum. Excited to see her new gaff & chilli.

#HowLongToCook This recipe is a butterbean smash with coriander seeds, spring onion, garlic, lemon zest, olive oil, etc., with roasted carrots, Hazelnuts, parsley took an hour & 20, cookbook said 1 hour. Baked a banana bread alongside.

Back from a screening of #AnotherSummer @tudublin.bsky.social film by refugees about refugees, set after the Taliban takeover in 2021 and the Russian invasion of Ukraine in 2022. Really poignant, sad & hopeful. It was organised by #PhibsboroForAll and great to catch up with my old pal Ken McCue too.

#HowLongToCook Three Leek, Mushroom & Quorn Chicken Pot Pies- recipe said 15 mins prep & 45 to cook, but in reality it was 1 hour 20. Made Rosemary roast potatoes to go with it too.

#HowLongToCook So tonight I started prepping the veg at 16.58pm, making the sauce, etc. and sat down to eat at 17.50pm, so 50 minutes thereabouts. Roasted Tofu & Aubergine with Chilli-Peanut Satay Sauce, mint & peanuts on top.

A new gift edition of James Joyce's The Dead is published by @newislandbooks.bsky.social with an introduction by @nualaoconnor.bsky.social I also read that Joyce set the story on January 6th, Feast of the Epiphany, as a nod to the infamous 🌀Night of the Big Wind🌀 1839 that devastated Ireland.
