These look wonderful… I love that they’re pancake-shaped and cooked, but with yeast dough.
The salt pork thing is interesting, as it’s also a New England thing - base for fish and clam chowders.

We had a publisher client that used them to digitize a book and magazine collection. Did a very nice job of creating combination graphic and OCR PDFs with full metadata.
Very easy to work with, and did a great job.
