But as I lifted the lid off the bowl I saw that this was going to be different. The soup glowed a deep reddish-brown, like burnt caramel lit by the sun. As I picked it up, I heard a gentle rattle, which turned out to be dozens of teeny clams, each no bigger than my pinky nail, clattering along the bottom of the lacquer. The soup was rich and briny and sweet, like the shoreline between earth and sea, like nothing I’d ever imagined before. Oh, I realized, this is why. There was so much in the world that had resigned me to cruelty on that May morning. The war on Gaza was raging, fascism was continuing its rise around the world, and there were so many places in America where my wife and I could no longer travel safely. On some level, I thought there was nothing the world could give me anymore. At best I could find mediocrity, the same wine bar or pour-over cafe on every corner of the planet, everything perfectly good in exactly the same way. But even then, I thought there were no pleasant surprises left, only the shock of how bad things could get. And yet, this soup. This soup was new to me. I hadn’t thought it could be made this way. What else didn’t I know?

I want you to think about the phrase "hot ice cream" for a second, because you will think you know what it is. And then Banks and the Smize & Dream team will do everything they can to dissuade you of your certainty. "I'm not talking about a latte, I'm not talking about hot chocolate that has flavors," says Banks. The product is so new, it's not listed on the company's website yet, so there's no clue there. And in the comments of her introductory video, her team shoots down every plausible guess. "So …custard?" posits one, to which the official account lobs "So … naw." Another asks if it's like a warm milkshake? "Not quite." Melted ice cream as a drink? "It's a drink. But it's not melted." Or perhaps just a warm cup of milk. "If only it were that simple," they taunt. I cannot even tell what we are left with here. At a certain point, it seems like a liability to refuse to tell customers what is in the cup.

Sometimes you just find another great "but that's a whole new recipe" entry
I used 4 times more spinach (1 pound prewashed fresh spinach that I washed and trimmed off the big stems and cut with scissors in the colander), plus one chopped leek and my onion was a mix of celery and onion prechopped and instead of veg broth I used chicken bone broth, some water and some no-salt powdered chicken bouillion and added a cup of rice milk plus herbes of provence, teaspoon dried dill and a dash of nutmeg and white peppercorns. Came out very flavorful though it could be thicker.

Well, everything. The death of art. [Laughs.] A thing that I’ve been struck by in the last year of tech development around art is that what makes us human is making art, even if you’re not a professional artist. This is kind of corny, but I think about cavemen, right? One of the first things we ever did as a species was put our handprints on a wall, and it’s just this drive that has always been there. It’ll always be there. And I think it’s preposterous that these people are suggesting that they develop this technology, and the first thing they want to eliminate is art, so you have more time to…what, email? I don’t know what they think I’m going to do with my fucking day. Most of the population is not artists, but a lot of the population has artistic hobbies, and if you replace that with a computer doing it for you or whatever, it’s just pointless. I think there’s a death drive in these people, almost, and an actual hatred of artists; they are jealous of people with imagination because they don’t have one, and they almost consciously want to eliminate it.
