Maybe focus on some short stories? The shorter the narrative, the less page time you have to complicate it, and if you keep writing them at some point you'll suddenly have an anthology, a whole ass book on your hands. At least I hope so, since that's what I'm trying.

As someone who once did this, I can tell you yes, you totally can do that. Just don't fall into the trap like I made for myself...by deciding as I finished the book I do in fact want to plan out an intricate plot four books long with lots of characters I can't even get rid of by killing off.
