I feel like I could tell based on the way the lines were delivered which of them was providing the post-dubbing for the other, but it would be a guess. Probably one of my favorite parts to listen back to on a rewatch though, if only because overdubbing like that is incredibly satisfying to me 😌

(She does also mention that the opening sequence text was edited by Penny, and that her text edits specifically start at "I think we were trying to go to a different world" after Sora wakes up on the beach)

Dollip actually covers this in their solo BTS discussion of episode one! The dialogue boxes were all ad-libbed during the dub (at least after the opening sequence) and she'd edit in the text afterward. My understanding is that they had a game mod that makes the boxes blank for easier editing too

Not sure how it fits into the overall timeline, but Snapcube started weekly releases of a five-episode dub of the first game a few weeks ago, so that has likely fueled whatever was already starting up before then (and may have something to do with any related parties playing the game themselves)
