For this I love Le Creuset cast iron dutch ovens. We have 3 in red, blue and green. With these we can make any color pot we like. ;)

I love this as it is amazing comfort food as the weather turns. And you aren’t eating the same thing meal after meal.

For soup take the thighs out and remove skin (start with bone in, skin on) and chop the meat. Add it all to a pot with some water. Add rice or noodles. I use orzo. Salt, pepper to taste.
Cook it long enough for everything to mellow out.
