Also be aware that there will be more liquid in cavity...the juices that usually end up in your fridge have to go somewhere. Also season about 2 1/2 hours after it's been roasting instead of at the start. But I promise it tastes better. No more dry white meat.

Last year I had 20 people so, I had to do an extra breast. And ham. This year is more manageable so far.

It's nice to not have all the bird juice to watch out for in the fridge and on the counter. And the turkey is very... sorry.. moist. But the trade-off pulling out the neck and stuff about two hours in.

I cook my bird from frozen every year. First year was an accident, thereafter it's been planned. Completely safe, just takes longer. Believe I researched the shit out of it, LoL.
