I feel like if you want that cream pie texture, just make a cream pie with whipped cream and gelatin. I had a cranberry cream pie this evening and it was quite delicious. But a few years ago I made a cranberry cheese cake with candied lemons. Was pretty good.

It's not from scratch but I like to get a box of stove top stuffing, and we spruce that up with sautéed holy trinity (onions, bell pepper, celery) and mix in cooked breakfast sausage. I also like to add water chestnuts.
