Lemon pesto. I adore this stuff. Never knew it existed until @phillyfillylive.bsky.social mentioned it in a recipe. I found a recipe online and it’s the STUFF!!! Delicious. Will use in an herby zucchini pasta dish on Thursday.

Pasta (I used the last of reg and whole wheat), frozen peas, mint from my garden, heavy cream leftover from another meal this week (or sour cream). Garlic, lemon, seasonings, etc. So delicious and so inexpensive. Probably a couple bucks a serving.

Cheap meal - 2 people, 2 very large servings. 3 russet potatoes whipped, kale bunch - could use spinach, collards, etc, 2 scallions, 6 Costco frozen shrimp each. Herb/Spice profile of choice. Around 5-6 bucks a serving.

Cheap pantry meal. Onions & peppers (which I froze), can or dried black beans, can or frozen corn. Tortillas (I froze). Jar salsa/hot sauce. Protein of choice. Did scrambled eggs tonight. Could do beef strips, shrimp, chicken, cheese, even potatoes. Add cilantro for freshness.
