You had me intrigued so I spoke with a friend in Christchurch.

Seems jam doughnuts that are akin to sufganiyot aren't a thing in New Zealand - their version of a jam doughnut we call a Long John in AU (a six inch length that is filled with cream and drizzled with jam).

Pav is always worth the time and effort, and frankly as you get more practiced, it is a quick and easy fall back taking more time to cool correctly than actually make.

You achieve marshmallow by adding a spoonful each of cornflour and an acid (commonly white vinegar, but even lemon juice will do).

Those two additions separate a genuine pavlova from a simple meringue.

Jam donuts were quite common in Australia. There is even a caravan selling fresh ones at Victoria Market in Melbourne.

I can understand wanting to try them - jelly doughnuts are not the jam donuts of my childhood. 🙂
