If you are enjoying Thanksgiving with people who won’t eat sauerkraut, braised red cabbage with a lot of red wine vinegar will be an okay swap. Even better, find kindred spirits who understand that sauerkraut is delicious

The best post-Thanksgiving sandwich is turkey, roast veg, and sauerkraut on buttered toast; dunk in gravy. Sauerkraut is also good as part of turkey soup — add it to the turkey broth you make from the carcass along with veg like carrots and potatoes

I think sauerkraut is best cooked low and slow for hours in a crockpot with tart apple, onion, and white wine, but even just heated up in a skillet with butter will do. (One of my grandmothers always added sausage and caraway. Another cooked her sauerkraut in beer. All of these are good)

If you have been persuaded by Samin Nosrat that your Thanksgiving table needs acid, you already know why sauerkraut is the right thing to do. Sauerkraut balances all the sweet, bland, and/or rich food on the table

I grew up in the Baltimore area, where sauerkraut is a normal side dish for turkey. That’s probably because a wave of German immigrants in the 19th century brought the tradition of eating sauerkraut with goose, duck, or game birds
