Coastal Maine dairy farm, run by a husband and wife , making award winning cheese, raising cows and pigs and trying to find a Daily Dose of Good. Www.Lakinsgorgescheese.Com
I’m actually in favor of the penicillium candidum falling out of favor. Cheeses are more interesting when the rinds have complex, as opposed to mono, cultures. I Look at the rinds in Europe & swoon. But my customers want pure white because they equate that with “good” cheese. I want rind variety!

I believe you can find Vermont made Jasper Hill cheeses and Oregon made Rogue Creamey cheeses through Neal’s Yard Dairy. Their Rogue River Blue won the World Cheese Awards in 2019!

No. Every kind of cheese imaginable is made in US, including original cheeses with no European antecedents. But the American approach to promoting cheese is definitely lackluster. This is a great magazine that talks about all cheeses, but has good representation for domestic. culturecheesemag.com

I made one in a workshop I took once, but it’s not something I make. I make an aged cheese that’s almost like tomme (and just won a Silver medal at the World Cheese Awards!), 4 bloomy rind cheeses including one with seaweed, and a mild blue cheese. www.lakinsgorgescheese.com

I’m a US cheesemaker who is fascinated by the history of cheese. I’m guessing you’re in the UK? Kirkham’s Lancashire is very good and I think widely available. And I believe Appleby’s Cheshire is also a larger company. You might enjoy this article about Cheshire academyofcheese.org/cheshire-che...

The farm will also follow rotational grazing practices, which lowers the impact on the land and provides a healthier overall diet for all the livestock. They also then fertilize the fields, helping to reduce labor and the need for soil amendments.

But that's in the future.

People toss about the phrase, "Eating is a political act" but really it is agriculture that is a political act. Everything is weighted toward chemical based, volume production, which makes smaller farms bear a greater cost relative to production. Neal will be happy to elucidate.

The farm will follow organic practices, which means no pesticides or chemical fertilizers. The benefit is that there is a lower environmental impact. The down side it's that everything is more expensive.
