I...I might actually make this for my Eff-Thanksgiving Feast this year! It certainly beats the always mildly disappointing seitan-loaf I never get right 😅

And yet...you have me wondering if I could make...a good Sandwich Loaf. A light, tasty affair. Cucumber sandwich layer...a lighter, whipped cream cheese frosting perhaps with more herbs...

Oh yeah, lots of soft textures (though I imagine a clever person would put in some celery, etc).

Like...it be tasty, but, especially in northern MN (the only place I've experience The Loaf) it is just...so much cream cheese and mayo-laden meat "salads." Every bite gets heavier and heavier...

Honestly, as a vegetarian, I imagine making this with a chickpea salad and a tofu-"egg" salad, and I think it would be good...for like a slice. Then I would look at the rest and think, "Oh no...no I can't eat the rest of this. I'm done. For like...a year."

But then I *would* eat it...and regret it.

I worked at a bakery/deli, and when I see pullmans I think of sandwich loafs.

For those not in the know, a sandwich loaf is... a cake, but it's bread with different sandwich slops (chicken salad, ham salad, etc) in between, and cream cheese for frosting. It's horrifying...but good...but awful.
