I've enjoyed them, cause it was nice to try to figure everything out without a guide. And there's nice rewards from doing them.
The second and third dungeons are definitely more interesting than the first. The third even has links to lore that came up in Dawntrail.

They have done some less straightforward stuff in the variant dungeons. Interactions changing boss mechanics, some stuff requiring specific emotes, and needing to read the notes to figure them out.

Yea I've been shifting some of my high use abilities on some jobs to mouse buttons to alleviate this for myself. Trying to reduce how much I need to use the shift or ctrl keys.
