Also, I used bean threads (aka mung bean noodles, one of your glass noodle options) instead of the sweet potato noodles, which don't even need a pre-cook, just a 15 minute soak and drain, and then add in the last few minutes of cooking

It was very good! Not a complicated recipe either, very quick once you have your prep work done.
