Oh the 72-pack of Kerrygold at Costco is absolutely the way.

Looks like it’s the same fat content. A fair bit lower in salt, although I can’t say I noticed that.

I also love Kerrygold! This is also a delicious cultured butter, very smooth. It was a smidge cheaper than Kerrygold at the store.

I really love the savory/sweet interplay in this recipe, I don’t think I’ve ever had a pie quite like it. I used butternut squash instead of pumpkin, and mirin instead of sherry.
