I personally like the texture and taste of farro so muchhh my husband is a sucker for Insalata di Riso which in Italy Is boiled rice served cold with lots of different ingredients (like pickled and in oil veggies, tuna, Mayo, wurstel, diced cheese, ecc).
I am not a big fan so I make the farro one!

I always do that in summer but with farro!
I just boil the farro and once it cools down I add cherry tomatoes, diced mozzarella and fresh basil + olive oil.
If my basil is enough I also do some homemade pesto and add it!
