As my goal for now is to start a blogging, not building my own Hugo template... I think I'll go with Stack.

Hextra seems amazing for documentation, and it provides shortcodes for a cool portfolio section. But the blog part seems a bit lacking for me.

Stack seems perfect for a blog, with support for categories and tags.
