Smoked turkey and chicken skin can be rubbery, so I really like this step to try and combat it. A little higher temp helps too. A pellet grill is probably more like a convection oven than a true offset smoker.

I actually got a great education from many Native teachers at the U, and enjoyed most of the courses I took in what was then (still?) the American Indian Studies Dept. which at the time was one of the only Universities with Native language courses.

I guess there are still some corners to turn, but after the 2nd game of the season this team has looked shaky at all times, including when winning. I hope it changes but seems like that is who they are.
