This is one of my favorites-a tempura cicada made with cricket tempura batter & served with a cricket gochujang mayo.

Interesting factoid-depending on how long the adult has been above ground, will have a significant factor in how “meaty” they are since they don’t eat after reaching full maturity.

Happy Lunar New Year!

Pictured are black ants (either Lasius niger, or Monomorium minimum). Fun fact, I always thought that the periodical cicadas life span of 17 years was incredible, but the Lasius niger queen ants have been documented to live a whopping 29 years!

We are thrilled about the emergence of the Brood XIV periodical cicadas this year. This will be our third cicada emergence, and this particular brood is actually an incredibly special one—well, they’re all very special aren’t they?!

Hope this Monday finds you well rested and ready to explore a new week filled with curiosity, and the potential for great productivity and discovery.

At the Field Museum holding Polylobus darwini (a beetle) collected by Darwin from my visit through their private collection last year.

This plate of edible insects were from a street vendor in Thailand, fried with aromatics, and then finished with a spray of soy.

I’ve made a couple dozen dishes with periodical cicadas but realize it’s not nearly enough! Happy to have my kitchen in (semi)-working order after my move, and excited to create some new dishes with my favorite insect.
