I like bitter things plenty. If the flavor of malört is distilled human cruelty, campari is something far darker and lovecraftian in nature. I don't like either, but I could be convinced to drink Malört again. Campari? Never again.

Big tip: Diversify!

Mushrooms have a ton of variety in flavor and texture. Don't stick to just portobello, button, and shiitake.

I highly recommend trying something with morels or oyster mushrooms in it. Morels are incredible for flavor and oyster mushrooms have great texture when sauteed.
