Presumably the Cold Mountain book is even better than the film or was it written to be a film like the Game of Thrones series?

Well I am very biased, but I have read the Silmarilion, the Hobbit and Lord of the Rings 3 times now and absolutely love them. I’ve also read a few Dickens novels, but I now need to look into Charles Frasier 👍🏻

Basically you know when it’s ready for the oven when you stick a sharp knife in the thickest part- if it comes out warm it’s ready. The oven finishes it off. If the knife comes out hot it’s going to be dry when it comes out the oven 👍🏻

Just put it in a pot, cover in cold water, bring to the boil, then repeat after chucking the original water. Once boiling a second time reduce to simmer for 1.40 for a 3.4kg ham. 2.9kg about 1.30 hours. 4kg about 1.50 hours.

I used a jar of Coleman’s English mustard and a jar of quality honey. I mixed them together and put half on, then after 12-15 minutes in the oven, I put the other half on for a final 12-15 minutes.

3.4kg ham. Heated it in cold water. When it boiled I repeated the process. Added celery, carrots, onion, black peppercorns (12) 2 bay leafs. I boiled it for 1.40 minutes. Removed the skin, crisscrossed the fat, added cloves, covered in honey and mustard, cooked for 25 minutes in 200 oven.
