Anything can be barbequed. It definitely isn't only pork and is definitely influenced by indigenous methods of smoking fish and pibils for deer and turkey. Pibils/barbacoas are also filled with beans and stews. It's always been diverse.

Barbeque is a method of cooking. Seasonings and sauces are up to the cook. Different regions emphasize bbq with sauce or dry rub or putting tons of stuff in a pit. As long as it's low and slow cooked with smoke it's bbq.
