Sadly that's how gluten free/allergy free shopping is every day. If you are able to find one, some grocery stores will ship store to store and let you pick them up now. We have done that to cushion the blow. You have to of course use store apps, but it's better than nothing in some cases.

Man if I could find good gluten free ones without potato, or oats. That's like finding a unicorn!

Reminds me of my great grandmother. She was the reason I discovered and loved pizelle cookies. She used to make homemade ones every year and we would always graciously accept them. Couldn't eat them the last few years though. Her mind started to go and she began subbing non food ingredients. ❤️😰😔

Add an almond to the top and you have a mini almond joy. Substitute dairy free chocolate and coconut filling and it's safe for dairy allergies 😋.
