What if you Magnets?
Run three sets of wheels/gears on the ankle joint in a Y pattern to allow for omnidirectional movement, and a magnetic bearing coupling inside the ball to hold it in place. The circular sides can stay put if attached similarly to the outside rather than built into the spheres

Also, if in the process of harvesting the crust of this delicious french breadstick it proves too brittle to support Ellens tiny body and fails on her when she's trying to baguette, then falling in the resulting hole will mean she'll certainly be in a lot of pain.
