With no/limited budget? Sentry logs. I'm adding Sentry to every project for error tracking anyway... might as well use what they offer for logs.

Unlimited (VC) money? Most likely DataDog... 🔥
Myself? I'll take Loki + Grafana, easy to self host and use. For dev envs&CI I'll limit retention, use cheap storage and log as much as possible.
