I mixed in the chicken pieces, now to let everything cook for a few hours while I try to shovel the walk…

I transferred this into the slow cooker and added cream of chicken soup, stock, and milk then mixed in some fresh carrots cut in half moons and a couple of fresh bay leaves

Then I created the sauce base by sautéing onions in the same skillet as the chicken with some extra butter, adding garlic and thyme, then deglazing with some dry vermouth

I started by seasoning 2.5 pounds of chicken breasts and thighs with salt, pepper, and sweet paprika and then browning in butter and some garlic infused oil

I did not have a chance to go on the Capital Limited before they merged it into the Floridian, but this was definitely a good trip! Hoping to get out there on the Cardinal one day also

It was in the single digits most of the time with a bit of snow, but the right layers (plus a handshake break every now and then) help! We went to Rossi’s, Lone Wolf, and Nick’s Beer Garden 🍻

We were able to get reservations at After for cocktails and appetizers including a delightful crudo and lamb ribs. My favorite drink was the yellow bell pepper daiquiri

I think we checked off most of the Chicago staples including steaks at Bavette’s, Italian beef and Chicago dogs at Johnny’s, and deep dish from Lou Malnati’s
