Paying principle and interest for the first five years of a 25 year mortgage doesn't reduce the principle all that much, I can't imagine someone thinks that doubling the amortization to 50 years is a wise choice... good grief! 😔

Freezing is just so we have dough on hand, the yeast isn't overly affected by freezing... but fresh is likely best.

I have an attachment for my Weber kettle BBQ. Lump charcoal in a semi circle at the back and chunks of oak added on top creates a very hot oven. I recall doing a pizza once in about 60 seconds, there's not much room for error.

Just a standard pizza dough. 2-3% salt, and similar amount of sugar. I stopped adding olive oil, but you certainly could use it.

I freeze them in a ball, a Ziploc sandwich bag works well. To thaw I place in the fridge overnight, then remove a good few hours to allow it to warm to room temperature.
