Made a big pot of instant pot congee last night to soothe my ouchy tummy & also to meal prep for tonight
(in case we both feel like blah. partner has a late meeting tonight; we both had 2x💉's earlier; planning ahead for the win)! Picked up a rotisserie chicken to add to the tofu from last night. 🍽️🍜
Two bowls of congee (savory rice porridge with ginger, garlic, & chicken stock) with soft tofu cubes, bamboo shoots, soy sauce, sesame oil, chopped peanuts, white and black sesame seeds, and a dollop of green cilantro-coconut chutney.

Today's holiday baking #recipe... cranberry orange walnut quick bread. Lightly sweet & tart, made with fresh or frozen cranberries and fresh orange juice and zest.

Festive, freezes well, keeps for up to a week in a cool cupboard, and perfect for breakfast, tea, or snacking! 🍽️🍜🍞 (link in comments)

Not doing a turkey & somehow don't have your menu set for tomorrow? How about turkey meatballs with dried cranberries & sage? Made these this weekend, planning to meal prep but we kept going back for seconds until they were gone & then we were the winners. Tender & tasty w/ gravy or dipping sauce!🍽️🍜

J/K, the packaging/concept is hilarious but at $79.99 a lot more $ per unit than just getting 4 of these ($13.99), and have almost enough $ leftover for a full-size bottle for Christmas with the in-laws or a couple packs of Old Style tallboys (now that's the Chicago Way!)

I mise'ed out the pumpkin crumpets yesterday (bc it was well past tea-time/afternoon snack by the time I actually got into the kitchen).

Mixed & griddled them today... so tasty! Eating a few hot off the stove w. apple butter & makin egg sandos tomorrow AM.

I was supposed to be canning tomato vodka sauce base & pear mincemeat this week & working on a bunch of seasonal recipes but I really can't focus on anything w/ everything going on, waking up to the sound of helicopters & more posts of ICE teargas in our streets. I'm so mad at these mf'ers, y'all.
