Less than 4 weeks ago I was in Fukuoka, and paid a visit to Marine World Umino-Nakamichi. One of the reasons was to see Riro, the male sea otter. Here's a compilation of videos that I took.

Very sad that Riro died at the age of 17 yesterday (4 Jan 2025). RIP Riro.

Finally got round to editing some holiday videos from last month in Japan. This one is taken at Toba Aquarium in Mie Prefecture - featuring their 2 biggest stars: Sea otters Mei-Chan and Kira-Chan.

Learning the flavour compounds in sake - very interesting to find out how the rice polishing ratio, different koji and yeast would create different flavour notes. More importantly, how off-notes develop when sake suffers heat or light damage or prolonged oxidation.

Got a portion of homemade sweet & sour sauce to use up, so using that to substitute the usual Magoya sauce for my deep-fried chicken wings. Delicious.

Fewer people than ever are drinking in Japan for health reasons. As a result, sake brewers have been hard-hit. Between 2000 and 2016, the number of breweries declined from 1,977 to 1,405. That means an average of 2.9 brewers closed every month during a 16-year period.

A cute name for sake: Poochi-Poochi Sake. This is a Suehiro #sparkling #sake, with only 8% alcohol. Very easy to drink and goes well with even spicy food.
