Super interesting. An alternative, in case you're looking for one, is an optional-but-highly-encouraged "bootcamp" right before/as class starts to fill identified knowledge gaps. My grad program did this for Masters students to (re-)teach calculus for their required stats course.

It sounds like you've found that fewer students can keep up relative to when you first developed the course. Assuming you think that's true, any ideas why, or what the learning / skill gaps are?

It's been fabulous with any stainless steel, carbon steel, and ceramic coated pans. I think you'll be fine. Having so much cooking area in a small kitchen has really been a game changer for us.

Also, their proprietary cleaning paste is pretty useful.

We have had the Freedom 30" for about a year. Pros: I use a huge griddle on it daily; it boils water crazy fast; I can Tetris so many pans I never run out of space. Cons: I hate the touchscreen; it overheats after hours of use; it's ruined all my Greenpans; it heats Lodge unevenly.

understanding extreme events and #speciesonthemove is rarely possible with modern-day datasets. instead, we screened hundreds of papers and read agency reports (like these books from the UCSC library) to bring old observations of range extensions to light. some species shifted 1000s of km in a year!
