Don't get me wrong on vanilla. I'm extremely pro-vanilla. No-bakes are about the balance of peanut & raisin for me, hence the simple recipe.
We keep 3 vanillas - Madagascar, Mexican, and Tahitian (cookie). Once you start playing with the various flavor profiles, calories get interesting again.
