It depends on the toppings and on the cheese. Yes, traditionally, the toppings go over the mozzarella, but did you ever have the porcini and gorgonzola pizza at Brick? I'm pretty sure the gorgonzola is melted on top of the porcini. Besides, "We are the makers of manners." ('Henry V')
