I pulse them up in a food processor. I add 2-4% weight in salt. Ball jar, ferment weight and lid. Two weeks or more on counter, more in fridge. Zip it up with other flavors.

I did Fresno & Aji with some garlic and sun golds all fermented. Zipped with apple cider vinegar and other stuff. Nice sauce
