As much as I like minimalism for logos, this just felt unnecessary. It was already simplified. Is the new one more legible, sure, but the other is legible yet has more personality. You need to balance minimalism with personality and flare (classic 1999 Burger King logo is an S tier example).

If you want more variety in terms of design, looking at artists like Bruce Timm and how he draws women might help. Adding curves and long flowing hair helps a lot.
