Did I nail the medium rare tonight?

Thick cut NY Strip seasoned with a thin layer of my All Purpose then a layer of Sweet Amber Fire. Seared on a blazing hot cast iron (475°) then basted with butter until 125° internal. Ten minute rest brought it to the perfect medium rare!

Lone Star Smoke started as a beef rub…but turns out it makes a killer fajita mix too. Tonight’s “Not a Fajita” Fajita: chicken, peppers, onions & mushrooms over Spanish rice. Basically a fajita that lost its pants.

It was good. Smoke flavor was very subtle. Friends that tried some said they wouldn't have even noticed if I hadn't told them it was smoked. I cooked at 350, just like in the oven, so maybe next time I'll cook lower to give it more time to absorb the smoke.
