I'm thinking I'll smoke some of this lemon salt tomorrow. I didn't occur to me to try it with the wine. I'm guessing I should go with a cabernet since it already has the oaky notes?

My 2 cents: If you are going low and slow, may as well confit the chicken and mix the spices et all at the end and let it marinate on the counter. Otherwise, stovetop it is.
