The forest & now the kitchen garden. Venison, parsnip honey cake.
Perfectly pink pomegranate syrup brushed char grilled venison. Beer sauce, artichoke puree, leek ash tart. All served on brown glazed stoneware plate. A delicate cinnamon tuile biscuit balances on honeyed parsnip cake dressed with poached pear & buckthorn yogurt. Micro basil adds herby intensity.

Mid course palate cleanser pickles, arctic char, mushroom porridge. Baltic meets Japan.
Cream & brown glazed bowl hold apple reduction glazed pink Arctic char, topped with pickled cabbages & a seaweed sorrel sauce. Pink & green, sweet & sour, soft & crunchy. Peeled cherry tomato flavour bombs. Lacto fermented, served ice cold. Barely brined cabbage. Into the forest with a tiny bowl of intense porcini sauce over an overnight soaked barley porridge enriched with toasted buck wheat & quinoa. Chives for a fresh grassy note.

Birch & blackcurrant, Jackson Pollock bread, Nordic ceviche, warming pumpkin bisque
Sparkling birch drink with blackcurrant buds Seeded leek bread with drizzled dips to smear. Reduced black apple, buckthorn, Latvian hummus, berry coulis & basil pesto A ceramic plate with brown & cream glaze holds translucent brined pike perch, shavings of kohlrabi, wild garlic “capers”, fermented young gooseberries & dill oils. A beaker of bright orange pumpkin bisque with a tiny fennel tart with pumpkin & spruce tip salsa.

As my Hungarian grandma was fond of saying, “we are poor, but we live well.”. This is a 3 night holiday, but it is with brio. Currently sat at a counter enjoying the chef ballet at 3 pavāru restorāns. More detail to follow.
A tasting menu including pike perch, pumpkin bisque, arctic char, mushroom porridge, venison & a parsnip & pear dessert.

Honestly, it is possible to think 'I work hard to earn money; I deserve that money' and *also* 'it would be good if we created a more equal society: I'll help'. Exhausting to see everything presented as a fight to the death between those two ideas, seemingly forever.

Shabby-vanti running 15 mins late so have missed my connection. Adding another hour to the home journey. And none of the charging points work. Yet for this I’ve paid over £100 for a return journey that’s delayed me an hour both ways.

Pacing round Runcorn station for an hour. Thought I’d maybe buy a butty as won’t now have time to grab lunch before my meeting. Freshly made here. How bad could it be?? BAD. Look at this list of ingredients. I just can’t.

Recipe for a Christmas pudding. No fat, just fruits, carrots, sugar, lemon, marmalade, breadcrumbs, flour, eggs & nutmeg. Mixing the pud in a large bowl with a wooden spoon. Wishes for 2026 made.
