Japanese curry with a Szechuan style tofu thrown in at the end, it barely needs to cook, basically just Cube it up and throw it in. When it's hot it's ready to serve. So good this way!

Bahn Mi inspired (Vietnamese):

If you go to a banh mi place and get the veggie, they will put no cheese. Some just do vegetables, others add thin sliced cooked tofu that's pretty awful. I like cheese on my sandwich, here is my compromise, with their same vegetables - and on whole grain French loaf.

My girl wanted some Fettuccine Alfredo, I made Linguine Alfredo (from scratch) because I don't like the super wide noodles.

Because I like it healthy I sauteed some broccoli and onion, and put all that at the bottom of my bowl.

Cream, hard parmesan, butter... it's like mac and cheese but elevated!

I wanted potato and I wanted vegetable so I tried to figure out the best way to do that. The answer? Home fries with kitchen sink spices. That's 11 different herbs spices and seasonings. See photo for details. Wok sauteed broccoli, diced onion, precooked potato <cubed> topped with cheese at the end.

I have posted my margarita recipe before but this is elevated. We had some drinks served at Breckenridge with Tajin on the rim and I thought that was pretty amazing. My lioness loves it and insists we do this instead of salt.

Bok choy are so gentle I sauteed them in a pan for 2 minutes with soy sauce, Sesame oil, and some minced garlic. I put them on top of my stir fry. If I put them in the stir fry they would have just been destroyed.

All from scratch, including the sauces. The pepperoni and the Alfredo are both on white flour, the spinach tapenade is on whole grain flour dough. My pizza game is getting really strong. I could open a restaurant and do better quality than 9 out of 10 companies selling pies right now.
