My hot take is that store bought pumpkin pie is bland (including Costco's!) and that if you make your own you should up the spices between 1.5 and 2x the recipe.

Schedule was shifted today so I came in at 9 instead of 8:30. LIFE CHANGING. That extra half hour made me awake, perky, and on time. Sadly, it was a one time thing, but wow the glimpse I just had into a different version of Morning Katie.

I've been feeling discouraged lately, so I'm getting behind on stuff. But I know I need to do that stuff so I don't feel even worse.

So, I'm gonna do it. 🤷‍♀️ Self care isn't always easy. But it is always worth it.

Friends, this is my gift to you. The recipe for my world famous gingerbread cookies. I'm not a gatekeeper, this has all the hints you should need. Use fresh spices, don't overbake, and store in a metal cookie tin for the most long-lasting freshness. Enjoy!

Katie’s Gingerbread Recipe Dry Ingredients: 3 ¼ cups flour ¾ teaspoon salt 1 ½ teaspoons baking powder ¾ teaspoon baking soda 1 teaspoon ground ginger ¼ teaspoon ground cloves 2 teaspoons cinnamon (Vietnamese cinnamon is my preference) ½ teaspoon nutmeg Using the freshest spices will result in better tasting cookies - trust my years of trial and error! I use Penzey’s spices, and I buy new every year. I use a bit more of each spice than listed; I measure but leave a bit extra on the measuring spoons. I like it to taste highly spiced! Wet Ingredients: ¾ cup vegetable shortening (NOT butter flavored) ¾ cup sugar ¾ cup molasses (NOT robust or blackstrap) 1 large egg Instructions: 1. Sift together all the dry ingredients, stir to mix spices evenly throughout the flour, and set aside. Don’t skip the sifting; it makes a finer textured cookie. 2. In large mixer bowl, cream together shortening and sugar. 3. Add molasses and egg and beat well. 4. Gradually add dry ingredients; mix well to form a stiff dough. 5. Divide the dough in two, wrap each half in cling wrap and flatten into a disk before placing in the refrigerator. 6. Chill at least 1 hour. 7. Preheat oven to 375º. 8. Roll dough ¼ inch thick. I use a rolling pin with spacers. 9. Use cookie cutters to cut dough into your favorite shapes. 10. Place cookies one inch apart on a greased cookie sheet (or use a baking mat like Silpat - that’s what I use). 11. Bake at 375º for 6-8 minutes. This is totally dependent on the oven you’re using. 12. When they’re done baking, cookies will be puffy, matte instead of shiny, and slightly cracked around the edges. 13. Cool slightly before removing from cookie sheet and placing on a cooling rack. 14. Let extra dough chill again for at least 15 minutes before rolling out a second time. 15. When FULLY cooled, store in an airtight container for best freshness. I prefer a metal tin lined with cling wrap. 16. Enjoy!

I'm learning that I def get too real too fast, and jump to calling something friendship when we're really just acquaintances. Kind of makes me sad that I should prob slow my roll.

So proud of my library. We set up a Little Free Pantry on a book cart and we've already had people come in to donate and had items taken.

I work in a small, affluent town where only 1% of residents are on SNAP, but that's still 100 people! Feedback from residents has been lovely. People care. ❤️
