Very nice ears today. Read an article that recommends starting your bread dough in a COLD oven - skip the preheat. I've always been taught that a good oven "spring" depends on a very hot oven. I've never tried the cold oven method and, frankly, am hesitant to do so. #sourdoughbaking #breadbaking

Beetroot powder sourdough bread. 75% hydration. Beetroot is 5% of the total flour weight. Crushed vitamin C = 2000 mg for 3 lbs of dough, or 667g per lb of dough. Next time I'll increase hydration to 77 or 78%. #sourdoughbaking #breadbaking

The finished ube sesame sourdough loaf. The use of purple yam is new for me, as is increasing the overnight fermentation time to 13 hours. I'm guessing that in order to get a deep purple color you'll have to use food coloring. #sourdoughbaking #breadbaking

In my home oven, bread loaves "A" are baked on the bottom baking steel. They get a better "ear" on them due to lots of heat from the top and bottom. All the baguettes turn out fine. The "A" loaves are a little prettier. #breadbaking
