Stir-fried in a wok with some garlic scapes, chile crisp and sesame oil, and any other fresh veggies you have on hand ( or maybe something hiding in the back of the fridge, lol ) — okra's forgiving about the company it keeps — till the kitchen fills with smoke!😂😋

Here in Japan's supermarkets, eringi mushrooms (king oyster mushrooms) are large, so they're typically sold in a pack of two. One is usually larger (taller?) than the other, and I always get an impression of the two of them cuddling or supporting each other. Ah, ever the romantic.❤️
