I did depression-cooking today. The events in Minnesota had me saddened and discouraged. Cooking for my kids helps me stay grounded. Also, empanadas are quite labor intensive, so it's good for the mind. Info about the empanadas in ALT.

Circular, uncooked flattened dough with some fillings on the center, before being closed for baking. The filling is stewed beef with onion, a quarter of hard boiled egg, an olive and a raisin. Empanadas are a very popular food in Chile. Some Chileans would say that empanadas are the quintessential Chilean dish, despite most countries in the world having some version of this finger food. In Chile, when you say "empanadas" people understand that you mean the oven baked version, with minced beef and onion, hard boiled egg, olive and raisin. But another very popular incarnation of empanadas are cheese empanadas which are fried most of the time.

Pedestrians face the evening rain at the Barkhor in Lhasa, Tibet. The street appears wet and reflects the myriad lights on the buildings at either side. The buildings are not very tall, only three or four stories high, and have lights in different colors with the yellow dominating. Most of the people carry umbrellas. Many of the stores remain open, and the high mountains that surround the city are visible far away as a dark blue silhouette.

My parents once had an old dog who was restless when sick. It would destroy its bed during the night, or poop in it. Each morning they had to brace for a new hell. The dog was mean sometimes. Maybe it was in pain. It was hard to tell.

POTUS feels like that now. Except that we always loved our dog.

Sourdough update: I finally achieved a good loaf without using a Dutch oven. Soft, airy inside with a crusty outside. The flavor is great, better than store-bought bread. I could eat this all day long (and unfortunately, I probably will).
