THIS ACTUALLY WORKS!!!
This is running on Docker, with the GPU passed through but still available to the host! With this I can ditch the Windows VM I used to use to play remotely.

I got VERY CLOSE to getting what I wanted working, but Xorg is segfaulting for mysterious reasons (yay!)
I suspect it's Nvidia driver shenanigans, so I might try upgrading to the latest Debian release to get a newer driver.
