I hadn’t heard The Highwayman in a long time and I forgot how insane Johnny Cash comes in at the end. You have three legendary country performers singing about being a highwayman, and sailor and a dam builder and then the closest thing country music had to the Voice Of God says “I FLY A STARSHIP…”

After work today I:
- baked a gingersnap tart shell
- made focaccia dough to bake tomorrow
- mixed up some compound butter
- spatchcocked a turkey and covered it in salt and baking powder
- baked the rest of the pumpkin tart (which involved making caramel!)
Whew
