For most applications that call for caramelized onions, these definitely require a sauté to dry them out. But if you’re making French onion soup, they’re basically there already!
I’ve seen folks say you can caramelize onions in a slow cooker for years, but I finally tested it. The same reactions should be accessible with lower kinetic energy input, albeit at a lower rate.
