Yeah, if it's content complete, what's the point of EA?
Balancing can be done after release (I've done some balance changes after release), and amount of polish depends on the game :/
I wouldn't say polishing would warrant EA tho 🤔
But I guess it depends from studio to studio.

For me, they are there for different things.
Demo is a finished vertical slice of the game, with a polished level/levels, and functionality that you are confident in.
EA is more for when you have things in place, but would like some feedback/visibility/money flowing in to keep working on it.
