Yeah, a lot of hot sauces are fermented, Sriracha and Tabsasco sauce are probably some of the biggest names in those. For the jalapeños, I’ll be making a green chili taco sauce so after it ferments, will be chopped and spiced fine.

Heck it could all be in my head, we tend to garden by gut feeling 90% of the time. 🤣🤣🤣
To be honest I don’t know, I’ve never experimented with all of the peppers we grow. I’m lazy and tend to harvest the hot peppers in batches and then finish them all in October when we want to switch out the garden. The ones that seem to suffer the most from the cooler temps are the Thai chilies.
We are preserving most of ours this year by making most of it into Salsa Verde this year (we are following the Ball recipe for that) and also making pickled green tomatoes. This YouTube channel has a ton of other ideas for green tomatoes: youtube.com/@1870s?si=Ca...

I don’t know, I find all my hot peppers, especially my Tabascos and jalapeños really go down hill fast as soon as the temps go into the 40s. Admittedly I picked a ton of tomatoes green that could go a bit longer, but that’s because we are planning to do salsa verde with the
peppers.
