I'll just cook it off now, purely to activate the starch and thicken it up to a nice satisfying 'gloop' texture.

Then it can chill down while the dough comes from fridge to room temp.

I was just dicing some charsui pork for baozi filling and I wasn't completely satisfied with the edge on my Furi East-West chef's knife so, prior to striking it on my steel, I gave it a little rinse.

The nylon brush slipped and, well…

My right forefinger with a band-aid on it.

I was nicked, ever so gently, by my chef's knife possibly in retaliation for me calling it 'blunt'.

Lunch was a soft and creamy 3 egg omelette on cheesy toast with a generous sprinkle of chilli oil (with the cruchy bits).
